Local lad, Andy Cavalleri started baking about 10 years ago, specialising in spelt flour as he had an intolerance to wheat. 

“I found spelt a lot easier to digest and, with a slight nutty flavour, it enhanced all cakes I made. Friends and family had always encouraged me to set up a stall at the market and about five years I joined the Moycullen Country Market.”

Andy says he is forever scouring the net looking for unusual and different cakes to bring to market and, as trends change, he tries to adapt with them. 

“Raw vegan is huge now and my big sellers are my mango and passionfruit and raspberry and lemon cakes. If that's not your thing you gotta try my millionaires shortbread, it's one of my biggest sellers.”

Andy also supplies the restaurants, 56 Central and 37 West, in Galway City, along with Tree Bark Store in Moycullen.
